Ham, Cheese and Melon Fingers

 

  • 1 ripe melon
  • 225 g (8 oz) 2 cups Gorgonzola cheese
  •  1 Rosemary Focaccia loaf
  • 175 g (6 oz) 3/8 lb Parma ham, thinly sliced
  • 15 ml (1 tbsp) softened butter
  • 15 ml (1 tbsp) chopped fresh chives

serves 4

1. Cut the melon and cheese into narrow finger strips.
2. Place a piece of each on a slice of Parma ham and roll up tightly.
3. Secure with a cocktail stick and serve on thinly sliced buttered bread.
4. Sprinkle with the chives.
